Remilk, in partnership with Gad Dairies, has officially launched “The New Milk.”  A first-of-its-kind dairy made with real milk proteins produced through precision fermentation, without the use of animals.

This marks the first large-scale commercial deployment of dairy products made from non-animal milk proteins, enabling consumers in Israel to experience for the first time a category that represents a global revolution in dairy. Identical in taste, texture, and nutritional value to traditional milk, The New Milk is now available in cafés and restaurants, with retail expansion to major supermarket chains planned for January 2026.

This milestone signals a major inflection point, moving Remilk and the broader precision fermentation industry from regulatory approval and pilot production to scaled commercial distribution.

The Technology

Remilk patented technology produces milk proteins that are molecularly identical to those from cows using a unique fermentation process. Unlike plant-based alternatives that imitate dairy, Remilk’s proteins match the real thing in taste, texture, and functionality.

The company recently achieved a major R&D breakthrough with a new yeast strain that doubles productivity compared to the Novozymes benchmark. This innovation significantly improves production economics and accelerates the path toward cost-competitive manufacturing at scale.

Why We Invested

Tau Capital focuses on growth-stage deep tech companies where scientific validation is complete and commercial pathways are defined. Remilk fit this thesis precisely:

  • Post-validation, pre-scaling: When Tau invested, Remilk had secured FDA approval and demonstrated technical feasibility with its patented process. The challenge ahead was scaling production and accelerating adoption.
  • Clear commercial pathway: The Gad Dairies partnership provided immediate access to trusted distribution, manufacturing expertise, and consumer credibility.
  • Strategic positioning: Our cross-border networks have helped amplify Remilk’s reach — including its selection for Abu Dhabi’s precision fermentation initiative, which paves the way for GCC expansion.
  • Market readiness: Research by Remilk, Gad, and Geocartography Knowledge Group showed clear demand:
    • 55% of Israelis find current milk substitutes lacking in taste
    • 50% of kosher-observant consumers would drink milk after meat meals if a kosher-pareve option with authentic taste existed

The Launch

Remilk’s rollout includes three products, strategically sequenced for adoption:

  • Barista Milk (Foodservice): Available now in cafés, restaurants, and hotels to build brand visibility among professional users.
  • Everyday Milk (Retail): Launching next month for household use.
  • Vanilla Milk (Retail): A flavored variant launching next month.

All are lactose-free, cholesterol-free, and kosher-pareve, with 75% less sugar than conventional milk and fortified with calcium and vitamins.

The Gad Partnership

Partnering with Gad Dairies, Israel’s fourth-largest dairy company, gives Remilk immediate commercial scale and credibility. Gad brings:

  • Established foodservice and retail distribution
  • Decades of manufacturing and quality control expertise
  • Deep local market insight and regulatory alignment
  • Generational consumer trust

As Gad’s Chairman Ezra Cohen described, the partnership represents

“a global breakthrough for Gad, milk born from advanced science and technology, yet rooted in decades of culinary tradition.”

Market Context

Israel provides a strategically significant proving ground:

  • 92% of Israelis consume animal-based milk, but 61% also drink milk alternatives—showing openness to innovation.
  • 66% of Israelis maintain meat-dairy separation; a kosher-pareve milk eliminates this friction.
  • With regulatory clarity from both the Ministry of Health and FDA, Israel serves as the ideal testbed for scale-up ahead of launches in the US, Canada, and Singapore.

Looking Ahead

This launch establishes one of the world’s first commercial proof points for precision fermentation dairy at scale. Consumer adoption metrics and repeat purchase rates over the coming months will serve as key validation indicators.

As Aviv Wolff, Remilk’s Founder and CEO, shared:

“We founded Remilk with a clear vision- to create a better, healthier, and tastier world through real milk made without cows. Today, in a remarkable global milestone, that vision is becoming a reality.”

Remilk’s products are now available across select cafés and restaurants in Israel, with retail expansion to follow in early 2026. Additional product categories are in development.
